I'd suggest starting with Astonishing X-men. Collected in the trades, the first four books (Gifted, Dangerous, Torn, and Unstoppable) are a complete arc written by Joss Whedon. It’s a solid story and has some beautiful art in it.
Since comics running concurrently can have different continuities, it can take some figuring out which one is one you’d like to follow!
